Thai Noodles

Ingredients

  • 8 ounces rice noodles
  • 1 1/2 cups carrots, coarsely grated or shredded
  • 4 Tbs brown sugar
  • 3 Tbs lemon juice
  • 4 Tbs soy sauce
  • 1 Tbs vegetable oil
  • 3 scallions, finely sliced
  • 1 garlic clove, minced
  • 1 tsp grated ginger (optional)
  • Fresh cilantro, to add texture and garnish
  • Lightly chopped salted peanuts, to add texture and garnish

Preparation

  1. Bring a pot of water and a Tbs of salt to a boil. Add the rice noodles and cook according to package directions, about 8 minutes.
  2. Once cooked, drain them and rinse them in cold water time after time.
  3. In a small bowl, mix lemon juice, brown sugar, and soy sauce.
  4. Heat the oil in a large skillet. Add the chives and garlic, and immediately add the carrots.
  5. Add the mixture of liquid ingredients, and cook everything for a couple of minutes so that the flavors combine well.
  6. Lastly, add the noodles and toss until well combined, cooking for an additional couple of minutes.
  7. Serve immediately, adding the chopped cilantro and peanuts.


 

Note: Any vegetables to your liking can be added, at the time the carrots are added.
