Cauliflower and Chia dough for pizza (Gluten Free)

Ingredients

  • 3 cups cauliflower grated or “ground” in a food processor
  • 1 cup rice flour
  • 1 cup chickpea flour
  • 1 tsp salt
  • 1/2 tsp oregano powder
  • 1/2 tsp basil powder
  • 3 Tbs chia
  • 9 Tbs hot water

Preparation

  1. Soak the chia in the water. Set aside.
  2. In a non-stick pan, put the cauliflower alone and cook it for 3-4 minutes until it releases a little of its moisture and it evaporates.
  3. In a bowl, mix the flour with the cold cauliflower and the chia “egg”.
  4. Add the salt, the herbs and mix everything to form a dough.
  5. Spread the dough on wax paper or pastry paper, giving it a round and thin shape approximately 1cm thick.
  6. Bake for 40 minutes until it starts to brown.
  7. Take it out of the oven and put tomato sauce, vegetable cheese and any vegetable of preference.
  8. Return to oven until cheese is melted 
  9. Serve warm.
