Tex-Mex Rice

Ingredients

  • 1/2 finely chopped onion
  • 1/2 diced red bell pepper
  • 1/2 diced green bell pepper
  • 1 cup red or black beans, cooked and drained
  • 1 cup corn
  • 1 tsp turmeric powder
  • Salt to taste
  • 1 pinch cumin
  • 1 Tbs olive oil
  • 2 cups rice
  • 2 1/2 cups boiling water
  • Avocado

Preparation

  1. In a pot, sweat the onion with the olive oil. Once it is crystallized, add the rice. Let it incorporate well with the oil and onion, mixing and browning at the same time for 2-3 minutes.
  2. Add the boiling water and the rest of the ingredients. Mix well.
  3. Cover and let the rice cook over low heat.
  4. Serve with avocado on top.
