Banana-Flaxseed Muffins

Ingredients

  • 2 cups flour (you can use 1 cup whole wheat flour, and 1 cup white flour)
  • 2 Tbs ground flaxseeds
  • 3 ripe, mashed bananas (you can use a fork or a food processor to get the banans into a puree)
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup sunflower or vegetable oil
  • 1 tsp baking powder
  • 1/4 cup chopped walnuts

Preparation

  1. Preheat the oven to 350º F.

  2. Mix mashed bananas, sugar, vanilla, salt, oil, and flaxseed in a medium bowl.

  3. Add the flour and baking powder and mix well.

  4. Add the chopped nuts and mix lightly.

  5. Put the dough by spoonfuls in greased muffin pan lined with  muffin papers and fill to 3/4 with dough.

  6. Bake the muffins for 20-25 minutes until a toothpick inserted comes out dry.

  7. Take them out from the oven and let them cool on a cooling rack.
