Blueberries Muffins

Ingredients

  • 1 1/2 cup wheat flour
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 2 tsps baking powder
  • 1/3 cup sunflower or grapeseed oil 
  • 2 Tbs ground flaxseed
  • ⅔ plant based milk (almond, coconut, soybean, etc.)
  • 1 cup fresh or frozen blueberries

Preparation

  1. Preheat the oven to 350º F.

  2. In a bowl, sift the flour, sugar, baking powder, flaxseed, and salt.

  3. In a separate bowl, mix the oil, water, and soy milk.

  4. Add the liquid ingredients to the container with the dry ingredients, and mix, immediately add the blueberries.

  5. Spoon mixture into greased muffin tins, or muffin liners.

  6. Put them in the oven for 20 minutes or until a toothpick inserted into a muffin comes out dry.
