Falafels

Food is ALWAYS better when made from scratch, and this falafels are SUCH proof of that! 
They are so delicious, they´re practicly addictive, and the freshness of each ingredient comes through in every bite.  

Ingredients

  • 3/4 pound chickpeas soaked for 12 hours, discard the water
  • 1 cup (packed) fresh cilantro
  • 1 cup (packed) fresh parsley
  • 5-6 cloves of garlic
  • 1 medium purple onion
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika

Preparation

  1. Put all the ingredients in a food processor and process until everything is finely ground and a dough can be formed when pressed into a fist. This will be very clumpy, but this is normal.
  2. Heat oil for frying.
  3. Form balls with your hand and put the falafels in the hot oil to fry them on all sides until they are golden brown.
     

NOTE: These can also be baked, by lightly greasing a baking sheet and putting the formed falafel balls on it. Bake for 30-40 minutes or until golden brown.

Falafels can be served with pita bread, hummus, yogurt sauce, tabbouleh salad, or even as a side dish!
