Ingredients
For the filling:
- 1/2 cup brown or turbinado sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 3/4 cup of water
- 1/2 kilo of cherries without stone
- 1 teaspoon vegetable oil
For the topping:
- 1/2 cup ground oatmeal
- 1/2 cup of flour
- 3 tablespoons of brown or turbinado sugar
- 1/2 teaspoon salt
- 3 tablespoons vegetable oil or vegetable butter
- 1/2 cup non-dairy milk
Preparation
- Preheat the oven to 350 degrees F.
- In a medium pot, with the heat off, place the water, sugar, cornstarch and cinnamon, stir.
- Add the cherries and turn the heat on.
- Cook until it begins to thicken, stirring frequently.
- Place the fruit in a baking dish that has a good depth to be able to put the topping on top and prevent the fruit from spilling over when boiling in the oven. Set aside.
- In a bowl, place the ground oats, flour, sugar and salt.
- Mix and add the oil and butter and mix until you get a consistency like wet sand.
- Add the milk and form a light dough.
- Place this dough by tablespoons on top of the fruit covering all or most of the surface.
- Place in the oven to cook for 30-35 minutes until the topping is dry, golden and crispy.
- Serve warm with vanilla ice cream, or by itself.
